I've noticed that the fans in my tx2517ca spin faster when my screen turns off... I don't understand why. Is my system defragging itself when the screen turns off?

If so how can I turn this feature off? because I don't want my computer heating up like that when I'm afk for the whole day... while forgetting to turn off the computer.

i think this is caused because your notebook goes to idle mode so it starts some program that has been set to start in idle mode(search indexing of windows, antivirus ...).
try to turning of the search indexing of win 7.

this is normal and you shouldn't change the behavior.
But it does only take a few minutes (not more than a hour :p), after that, after it finished indexing or doing other things which increase performance your PC should be silent and idle.
