So, in the inquiring minds want to know department - since SDuo is an Android device with Google Play Store, will we have to sign in with a Google account even though Outlook will be the default mail app?

Since the Play Store is a bona fide Google app, I wouldn't be surprised if you had to use a Google sign in.

But doesn't just about everyone have a Google account these days...?

I can’t imagine you’d make it through the device setup and on-boarding without entering a Google ID.

Many of us do. But in the early days of data breaches and scanning of our content for advertising purposes, many of us made the decision to keep separate accounts on Google, Apple and Microsoft as a form of "Chinese wall" so that no single breach would expose all. It may be/have been a gossamer thin wall, but perhaps better than nothing.

Just trying to understand the data architecture. I will use a Google account to log in if necessary, but it may be a new one. I have no desire to have my Microsoft account or Outlook contents scanned by Google.

    Sticks and stones...

Remember, this is just training wheels for the Fold 3 with S Pen (if I don't have to donate a kidney for one)...this time next year we'll compare notes on dual screens vs full screen...:p...assuming September 1 doesn't contain a pleasant surprise of a Fold 2 Pen Model...:D

You absolutely must have/being willing to setup a google account to get past the initial setup. Google has to get money from you some way to pay for android :D
